Grownup Lunch!


Here's a lunch I packed for my husband to take to work. This is a huge container so that is a decent sized salad!

Leftover potato salad, pears with a few pieces of dried mango.
Mixed salad with romaine, grape tomatoes, mini bell peppers, cucumbers
ham, cheese, carrots & snap peas. I didn't' send dressing because we have some in the office fridge.
I heard this was good :)

These containers are the ones I usually send the girls for their hot lunch because they seal really well. This is helpful when they don't eat everything and leave dressed salad, coleslaw or pasta sauce. They are just so darn big it annoys me. It makes them hard to pack in lunch bags, particularly on days when they need a morning snack AND an afternoon snack. They're fine for grownups though!

Lunch for my hubby


I made a quick lunch for my husband to take to work.

cucumber & carrot sticks, clementine, sweet pickles
Tina sandwich on 12 grain bread

Having a Veggie Day!


I packed myself a simple veggie lunch for a busy day. 

little dipper holds some salad dressing (Robusto Italian),
clementine, carrot sticks
salad made with - romaine lettuce hearts, cucumber, radish, celery, walnuts

It definitely helps me to eat properly when I pack lunch early on a busy day. Time gets away from me and I actually forget to eat when I am working!?! Then before I know it I'm starving and on the verge of low blood sugar. If my lunch is all ready to eat, it certainly motivates me to eat on time.

May the 4th be with you!

Happy Star Wars Day! This fun Star Wars themed lunch is for me!
strawberries & a Death Star clementine. Ewok teddy grahams under attack by a Stormtrooper
Princess Leia cheese sandwich with oreo hair buns, strawberry fruit leather, Vermont cheddar and nori features, on a bed of spinach & walnuts Light saber picks hold a red grape each.
The strawberries were tossed on the spinach to make a yummy spinach, strawberry & walnut salad. The little red dip cup holds balsamic vinaigrette. Yum!
There are a lot of firsts in this lunch, first time drawing on a clementine -- trickier than you might think!, first time using nori (eyes and eyelash details on Princess Leia - easy to work with using tweezers), my first time eating a spinach only salad. Yup, it's true. I am not usually a spinach lover. My husband started sneaking spinach into our regular lettuce salads and I didn't even notice! Now I am giving the spinach only salad a go. It's only a small salad as you can probably tell - I think I will enjoy it.

Pasta salad - a quick lunch

We ran out of bread the other day, so I made a super quick pasta salad in the morning and everyone had something new in their lunches! I had overslept by ALOT (up working very late the night before!) and was pretty pleased with my quick thinking. I only had the opportunity to snap a photo of my husband's lunch. The girls had to race out the door with theirs. They were a teensy weensy bit late for school.

Carrot sticks ( from our garden), ranch mini rice cakes, honeydew melon & clementine
pasta salad with frozen mixed veg, celery and chicken,  grape tomatoes from the shop.

When I made the pasta salad for the girls I had not put the celery or chicken in it.  I added the extras for my husband only.The girls' lunches each had a boiled egg for protein. I also picked the peas out of Amy's so hers literally had pasta, corn and carrots, kind of boring but I was hoping that she would like it. Well the verdict is in -- nope, not really. She's a tough critic. Rose ate ALL of hers!

We likely won't get many tomatoes out of our garden for a while - the weather was very windy and rainy for a while there and the plants just couldn't take it. Fortunately, tomatoes grow year round here so they can be planted again. The strawberries had a similar fate and this year's strawberry yield has been lower than usual too. So there isn't any homemade jam or syrup in the cards this year. I was really looking forward to trying a strawberry syrup recipe that I saw on Pinterest. I wouldn't buy strawberries to make those things as it would be so expensive.  1 quart of imported strawberries is $7.99 right now, and 1 quart of local strawberries is $9.99!

Leftover Spaghetti & Meatballs for lunch


We had a delicious spaghetti and meatballs dinner on Sunday night. There was just enough left to pack a couple of lunches on Monday. This one was for my husband. I am really loving packing leftovers for lunch. It's just SO FAST! I made this right after dinner when I was packing up the leftovers.

The fruit & veggies were easily removed and placed on the lid while the spaghetti was heated up in the microwave. I am pleased to report that there was no reisdue/staining etc from the spaghetti sauce in the plastic of the Easy Lunch Box after microwaving. Yay!

Leftovers packed the night before make for a fast lunch


I packed this lunch for my husband to take to work. I almost never pack lunch the night before but I had just the right amount of leftovers from dinner tonight so why not pack it all ready for lunch tomorrow? Plus I was a little bit excited to use my new jumbo silicone cup that came in my order today from Bento USA. It actually would fit in there a bit neater if I wasn't trying to cram two chicken drumsticks next to it :)

My husband's EasyLunchBox has - 2 baked BBQ chicken drumsticks, kiwi, fettuccine with frozen mixed veg, and a salad with - mixed greens including spinach, radishes, grape tomato, carrot matchsticks, apple pieces, cucumber and celery. The little panda container holds Italian dressing. I purposely put the kiwi in that little silicone cup so that he can easily remove it and the salad and rest them on the lid of his easy lunch box while he warms the rest in the microwave. I didn't purposely choose pink though - just noticed that it was pink in fact. He won't mind; real men aren't afraid of pink.

Since this was made up of mostly all leftovers (not the kiwi) it took under 5 minutes to pack! I should try this more often.

Chili Cheddar Corn muffins for lunch


I made my husband a man sized lunch in our planetbox launch, Lots of goodies to keep his tummy full. I suspect he ate the bagel sometime mid-morning,

honeydew melon, carrot sticks, celery with cream cheese, raisins, almonds, peanuts & sunflower seeds 
chili cheddar corn muffins, cinnamon & raisin bagel with cream cheese

The chili-cheddar corn muffins were very easy to whip up. I had about a cup of leftover chili from making some delicious oven chili dogs and I wasn't sure what to do with it  Chili-Cheddar corn muffins came to mind. I used a regular mini box of jiffy corn muffin mix, mixed as directed on the box (1 egg, 1/3 cup milk) and added 1 cup of chili and a handful of grated cheddar and baked as directed. Yum!

This is actually from last week. I had to go out on and lend someone a hand so I brought my own lunch along :)

Cream cheese and sugar free strawberry jam croissant, No bake energy bites
carrots, grapes, pineapple & a strawberry

Lunch for the hubby

My husband and I are having a pretty busy day today so he won't be coming home for lunch. I packed him this planetbox launch container to take to work :) He said he thought he would be pretty hungry today.

No bake energy bites, cherry & date bars (that my Granny made - yum!), a few pistachios
grapes, pineapple, kiwi & a couple of grape tomatoes 
two ham, Swiss cheese. lettuce & mustard croissants sandwiches


I think this will keep his belly full! I try not to make his lunch too cutesy -- do you think the hearts were too much? nah - me neither. The sandwiches were just begging for a pick to keep them closed ;)

Lunch for Dad

Finally, I think this terrible flu bug is over. I am feeling much better today and all of the girls are back at school. It;s been a rough couple of weeks. About two weeks ago, I made this quick lunch for my hubby to take to work. I haven't been making him lunch lately as he's been coming home for lunch pretty often. Guess what? He ate it at home. I must admit I do love when he comes home for lunch.

toasted country multi-grain bread with honey mustard, roast beef & provolone

I also packed the big dipper with a little snack - his favourites -- olives, pickled onions, pickles and cheddar cheese cubes.

We have had these new Planetbox Launch containers for awhile now but haven't used them very much. The sections are perfectly divided for this sandwich! It's also great for salads. They are too big for our little kids but suitable for grownups. Also they do fit in the Planetbox Rover carry bags which I prefer!
